The harvest of our olives begins, depending on weather conditions, from mid-October to December. The harvesting stage is most important and complicated because if the olives are not harvested at the correct time of maturing, there is the risk of maceration and loss of quality of the olives and therefore of the oil. The manually operated harvest called "brucatura" is the ideal procedure, even if very pricey and slowly, because it ensures the perfect integrity of the olive.
